20/52: Sunshine & Buffalo Chicken Pizza

Wow! 20 posts. It seems surreal that I have been posting since January. If you recall my very first post, I talked about how inconsistent I have been with blogging over the years. For once, I have seemed to stick with it. But, I owe a lot to you fabulous people who read my blog. Without you I wouldn’t have the motivation to keep posting. You rock! 🙂

Man, the past week has been yet another whirlwind. Between getting everything ready to start school next month, and training at work in addition to my personal life… lets just say I’m tired! The weekend can’t come soon enough. The craziest thing that happened this week though is related to the theft I had a few weeks ago. I came home the other night, went up and grabbed the mail and was opening it in the elevator on my way up to our condo. I literally had to read the letter twice. I was being notified by a collection agency that I had a check returned. Yep, you guessed it. It was a fraudulent check one of the thief’s wrote. But – you will never guess where they wrote the check in question… The GOODWILL. Are you kidding me? How low can you get? Writing a fraudulent check to a company like the Goodwill. Pathetic. Sooo I will be dealing with notifying the collection agency that they are also victims of fraud. FUN!

LOL. It seems like this will never end. Hopefully in a few months everything related to this event will be over with. I can’t wait for that day.

On a happier note, how about this weather? It is so refreshing to finally see some sun around here… I could wake up to this every morning. The sun is currently streaming in our condo and I am loving it. 🙂 70 degree weather today? Ohhh yeah. For those who aren’t Western Washingtonians, we haven’t seen 70 since November! To celebrate, I’m bringing you a super fun recipe. Buffalo Chicken Pizza. Oh yeah. I might be alone here, but any time something with buffalo sauce is on the menu, I’m all over it. I love the flavor and heat of buffalo sauce. In my book, its one of the best sauces. Then add two different kinds of melted cheese… need I say more? 😉 Check it out!

Buffalo Chicken Pizza

Italian-style pizza Dough:

Ingredients:

1 package quick active dry yeast (2 1/4 tsp)
1/2 cup warm water (105 – 115 degrees)
1 1/4 to 1 1/2 cups all-purpose flour
1 tsp EVOO
1/2 tsp salt
1/2 tsp sugar

Directions:

In large bowl, dissolve yeast in warm water. Stir in half of the flour, the oil, salt and sugar. Stir in enough of the remaining flour to make dough easy to handle. Place dough on lightly floured surface. Knead about 10 minutes or until smooth and springy.** Grease large bowl with oil. Place dough in bowl turning dough to grease all sides. Cover and let rise in warm place for 20 minutes. Gently push fist into dough to deflate. Cover and refrigerate at least 2 hours but no longer than 48 hours. {If dough should double in size during refrigeration, gently push fist into dough to deflate}.

**If you have a stand up mixer — combine ingredients in the order above briefly with your paddle attachement. Then switch to your dough hook, and allow the machine to knead for 10 minutes**

Buffalo Chicken Pizza:

Ingredients:

1/2 – 1 cup cooked chicken, shredded {More or less depending on how much pizza you are making}
1 T butter
1 T Worcestershire sauce
3-4 T hot sauce {use your sauce of choice – I used Franks}
1/2 cup tomato sauce
1 cup Monterey Jack cheese
1/2 cup blue cheese {or gorgonzola} crumbles

Directions:

Stretch dough to form pizza using cornmeal or flour to help you handle it. If you let it rest and warm up a few minutes it will handle even easier. Set pizza on pizza pan to the side and clean board.

In a medium skillet over medium heat, melt butter and stir in Worcestershire, hot sauce, and tomato sauce. {I didn’t like how thin the sauce was, so I thickened slightly with a little bit thickening agent… you could substitute tomato sauce for tomato paste if you like thick pizza sauce}

Cover the pizza dough with the buffalo pizza sauce, layer on the chicken and cheeses. Bake 18 minutes or until crisp

Mmmm… melty, cheesy goodness layered with creamy blue cheese and spicy buffalo sauce. Delicious!

I mean, check out this slice? I loved the dough because it wasn’t super thick, but wasn’t über thin. I love pizza crust, this was the perfect ‘in between’ pizza dough!
