25/52: Homemade Hostess Cupcakes with Patrina

I am horrible. Horrible! This past week has been a whirlwind. I know I said that last week — but really… this week. Craziness. Last weekend we were in Las Vegas {or Lost Wages as us Santies call it} for my bestie’s wedding, and until today we haven’t recovered. I have been exhausted! We weren’t feeling well while in Vegas so we didn’t even have a drink. No, not even ONE beer! Although we did visit the Hofbrauhaus!

We were just tired because we flew home Sunday evening and had to rush back into the work/school week full-bore. Plus, while I was gone I missed a day of class which in 6 day summer classes means you missed about oh, lets say a week. Any way. Today was my first day off. We finished our second grad school class yesterday {yahoo!} and our next professor didn’t assign homework over the weekend. Thank goodness! I have spent all day getting caught up around the house and such.Stay tuned for a new blog post either today or tomorrow for this weeks post. The yumminess is in the oven right now… as I type. I can smell it… yum! I think you will really enjoy it, it is a quick, yummy dessert choice for 4th of July weekend.

But right now… I’m back posting last weeks post {which mind you has been sitting as a draft since last week, I just never finished it!}.

Folks, I bring to you… a fun, new concept! Are you as excited as I am?? Here goes…

My Aunt Patrina lives oh, about 1,500 miles away in lovely {warm, sunny} Denver, CO! She came up with the idea of baking together, kind of like a “long distance baking” project. We are going to bake one project a month together and share pictures. Patrina picked June’s project — Homemade Hostess Cupcakes! As soon as she told me her idea I was so excited. I couldn’t wait to make a filled cupcake. Its been on my to do list for quite some time.

The process was kind of long… but the end result?? SO worth it. Check ’em out! Oh, and I will be adding this to a new page here on the blog — each month  I will post the project and then link back to the ‘Long Distance Baking’ page at the top of the blog. That way you can always keep track of each month’s project!

Hehe, I had to go there… I’m such a nerd. 🙂

Check out the ooey gooey middle! Eeeek!

Give ’em a try yourself! You can snag the recipe here at another of my favorite blogs (her cookies are ridiculous!)… Bake at 350!
